Irish Nachos Ingredients:
- olive oil
- Kosher salt, pepper, parsley
- cheddar cheese
- Optional: sour cream, guacamole, Guinness, Boston lager, couch, pillow, blanket.
How you go about making this:
Take about 4 good sized russet potatoes.
(You could use red potatoes if you are feeling a little classier, but under no circumstances use golden potatoes with this recipe. Wrong flavor, wrong texture)
Scrub them good and dice them up. Toss them in a bowl with some olive oil, 2 tsp kosher salt, parsley, fresh ground pepper, garlic powder.
Throw it in a baking dish
Sprinkle on shredded cheddar cheese. (You can add some monterey jack to make it creamier)
Add 1/2 c salsa
Bake at 300F for 20 minutes, then at 400F for 10 minutes
Serve with a whole bunch of good stuff: guacamole, sour cream, Guinness, Boston lager, Western movies, etc.
