Quiche Me Again, You Fool
- 1 tablespoon olive oil
- 1 onion, finely chopped
- 1 (8-ounce) package mushrooms, sliced (totally optional)
- 1 cup shredded potato
- 1 cup reduced-fat (1%) milk
- 3 large eggs
- 1/4 teaspoon salt
- 2/3 cup shredded Cheddar cheese
Before you begin:
Line muffin cups with muffin liners. As opposed to ocean liners, which are just far too big, and hard to get out of the pan. Preheat the oven to 400F.
Just throw absolutely everything except the potato and cheese into a bowl and get to mixing. Line the muffin pans with potato, then the egg mixture, then the cheese.
Bake at 400F for about 15 minutes.
These are fantastic fresh, but they are also great to freeze! Really quick meal for you or the kids.
