Corndog Muffins

This is just so crazy, you have to try it.

These freeze well, they are perfect for lunch, they are great for picnics.  They take you back in time to your childhood when you built a fort with your faithful crew in a meadow and pretended you were saving the world from alien invaders.  You had your broadsword and a galactic phaser, and the only thing you had to sustain your crew was CapriSun and corndog muffins.

If anything, they are amazinglicious.

What You Need For Your Sustenance: 

HomeMade Cornbread:

  • 2 c. cornmeal
  • 2 tbsp. melted butter
  • 2 tsp. baking soda
  • 1 tsp. baking powder
  • 1 tsp. sugar
  • 1 pinch of salt
  • 1 c. gluten free all purpose flour
  • PLUS: 1 package of hot dogs

Make Your Crew’s Grub:

Preheat the oven to 350F

Mix the cornbread ingredients in a large bowl

Cut the hot dogs into small pieces.  Slit the hot dog length wise and then slice the lengths in about 10 pieces width-wise.  Do this with the whole package of hot dogs.

Put the hot dog slices into the cornbread batter and stir in.

Then pour this into pre-greased muffin tins, or muffin cups, about 3/4 way up.

Bake at 350F for 13-15 minutes

Eat.  Conquer.  Celebrate Your Victory!
