Upsidedown Apple Shortcake

This is a great fall dish…for breakfast.

Why wait until the evening when you can enjoy this with coffee in the morning?  Really, I ask you.

Now, this is the normal recipe:

  • Gluten Free Bisquick
  • 3 eggs
  • 1/2 c milk
  • 1/3 c butter
  • 1 apple
  • nutmeg, sugar, cinnamon

But I would really like to lose a little bit of weight…or think that I am on that path.  Either way, I feel better.  This is how I made mine this morning:

  • 2 1/3 c Gluten Free Bisquick
  • 1/2 c fat free milk
  • 1/3 c Crisco butter flavored baking shortening
  • 2 Tbsp Egg Replacer
  • 3 Tbsp warm water
  • 1/4 c sugar
  • 2 apples
  • nutmeg, brown sugar, cinnamon

Before you start:

preheat thine oven to 425F

In a bowl, mix the Bisquick, milk, Crisco, Egg Replacer, water and 1/4 c sugar.  Mix it together until is is a good batter.

Now, peel the apples and slice them into bite size pieces.  Place these on the bottom of a sprayed pan and sprinkle the nutmeg, cinnamon and some brown sugar on top.

Then spoon the batter on top of them

Bake at 425F for 14 minutes

These go very well with whipped cream and coffee with cream and cinnamon.
