I can’t get anyone in my house to eat this. It might be “chick food,” but who knows.
I like it! Which means….wait a second.
This is a super easy recipe, so here ya go:
- 1 acorn squash
- a few leaves of spinach
- 1/2 cup of cooked white rice
- 1/4 cup of carnitas
- Kosher salt, pepper, olive oil
Get To It! –
Chop the acorn squash in half and place in a bakeable dish with 1 cup of water in the bottom of the dish
Cover with aluminum foil and bake at 350F for about 40 minutes
In this time, mix the rice, spices, olive oil and carnitas “rather well.” But don’t go overboard. No one’s grading you on this step.
Now remove it with potholders (some of us forget this step) and spoon out the seeds. Throw them away…or plant them!
Place a layer of spinach in the acorn squash, then spoon in the carnitas/rice mixture.
Place uncovered in the oven at 400F for another 5-10 minutes
Pressure Cooker Variety:
Chop the acorn squash in half and place it in the pressure cooker with 1 1/2 cups of water.
Cook for 7 minutes on high
In this time, mix the rice, spices, olive oil and carnitas “rather well.” Put it in the microwave for 3 minutes.
When it is done, take it out gently with a big spoon and place on a plate.
Place a layer of spinach in the acorn squash, and then spoon in the carnitas/rice mix.
Enjoy thoroughly, especially on cold, rainy days!
