You know life is good when you remember that Rice Krispy treats are completely gluten free. It gets even better when you find cinnamon marshmallows.
I love Easter time in grocery stores, because they start to experiment with marshmallows. Strawberry marshmallows, mint marshmallows, chocolate mint marshmallows, pink marshmallows, green marshmallows….you can make Rice Krispy treats with them all! It’s awesome!
But I always forget the recipe…I always think it’s like, 1 stick of butter, 1 box of Rice Krispy cereal, 5 packages of marshmallows. This is not the right ratio.
Let me help:
- 3 Tbsp butter
- 1 package of marshmallows (shoot for 10 oz)
- 6 cups of Rice Krispy cereal
I can get 2 batches out of one box of cereal, so buy marshmallows accordingly!
First, get your ingredients! Melt the butter and marshmallows in a clean pan, and melt them slowly. There is no rush with this, so go get some coffee, make some tea. Give it time. Patience is an ingredient (trust me).
Once the marshmallows have fully melted, start adding the Rice Krispy cereal into the pan. Do it relatively slow, but not slow enough that the marshmallows start to cool. Just fold it until everything is fully covered.
I am telling myself here that the camera adds 10 pounds. Especially to your hands. At this angle.
Okay, so this is the important part: SPRAY YOUR HAND WITH NONSTICK COOKING SPRAY and squish it down. This is the best way. Even better than a sprayed spatula. Just spray your hand and get to work!
